Kale in Mustard Oil
Ingredients
- 5 Tablespoons mustard oil
- 2 - 3 dried chilies
- 3 cloves garlic, minced
- 1 - 2 green chilies
- 2 pounds kale leaves, cut into strips
- 1 1/4 cups chicken stock
- Salt to taste
Directions
Heat the oil in a large pot over medium-high heat. When hot, add the red chilies. Stir until the chilies turn dark, then add the garlic and stir until it turns golden. Add the green chilies, stir briefly, then add the kale. Stir until the kale is coated in oil, add the stock, and bring to a boil. Cover, reduce the heat to low, and simmer until the kale is tender, 20 - 30 minutes.
Remove the lid, turn the heat to high, and boil until the liquid has evaporated. leaving only oil. Season with salt to taste.
